One of the reasons I am especially happy to have satellite tv is I can watch Food network. I am a fan of Alton Brown and his "Good Eats" show. Last night he demonstrated some ways to use Avocado that I'm sure I'll never try, but it was a fun show to watch and was about one of my favorite foods. (Yes, the avocado).
I prefer the Hass avocado which has an interesting history. All of the Hass avocados we eat today started from the same "Mother Tree", which unfortunately died in 2002 at the age of 76 to root rot.
To me a good avocado can be eaten with some salt and perhaps a bit of salsa, or on a burger, a seafood salad, even in sushi, the ways to use an avocado are endless.
I am also a fan of guacamole, I am always on the look out for the best guacamole I can find. So far the best guacamole dip I have ever discovered is made in a small Mexican restaurant in New London, Connecticut. Even though Miguel is almost related to the owner? I had no success in getting the receipe. I've tried to duplicate it, almost have it but not quite. Anytime we went there or anyone from there came here? Bringing a large container of that dip was a requirement. The tacos there are awesome too, but they don't travel as well as the dip....
Locally? The best guacamole salad I have had is at El Tipico. In the many years they have been open it is always consistently the best. Especially in the summer months when they use home grown tomatoes rather than hothouse ones. While I try the guacamole at every Mexican place I go to? So far no one locally has come close.

Sarge, Aunt Lucy, & Frank... I missed Sarge last time I was there. They are truly good people.
As for guacamole, can't stand the stuff :-(
Beef tip enchaladas with onion for me, and sometimes a Tamale.

I've been going there since I was little, same with Loma's but they just aren't the same anymore their portions went down, the prices went up and the quality of the food just isn't as good, so El Tipico is my number one spot for Mexican now. I agree the beef tips are excellent and if you don't like the guacamole? just means moreee for meeee - hehe

Okay, so the dinner will be crap regardless of your blog. But it don't help it neither.

In the grand scheme of things ALL dinner ends up crap, even the stuff from El Tipico.
That is the natural result when humans "proccess" the stuff ;-)

The key for good guacamole:
good avocados, tomatos, onions, salt, pepper, lime juice, cilantro, and a splash of tequila reposado to mellow out the lime. find your balance (different quntities of the ingredients) and enjoy...
